Sandwiches for a Large Group

While I’m not generally a fan (we can do SO much better guys), there ARE times when logistical constraints dictate a nice deli sandwich.  For example you may have limited cooking/prep/re-heating facilities, or limited cooks or limited time.  In those cases, this is not a bad option.  There is nothing at all wrong with the following lunch menu:

 

Lunch menu

  • Deli sandwich
  • Bag of chips
  • Apple or Orange (A bag of veggies is an option, but will add time and prep, plus you’d want dip to go with it.  I’d stick with the fruit)
  • Cookie

 

1 sandwich consists of

  • Deli meat = 3 ounces minimum to 5 ounces more generous
  • Cheese = 1 ounce (1 slice) minimum to 2 ounces (2 slices
  • Bread = 2 slices
  • Lettuce = 1/15 of a head of lettuce

 

  • Mustard – Serve individual packets from Sam’s Club.  This helps speed up the serving line and reduces waste.  If serving mustard in squeeze bottles, assume ½ tablespoon mustard (.25 ounce) per person, and probably a 50% – 75% or up-take.
  • Mayonnaise – Serve individual packets from Sam’s Club.  This helps speed up the serving line and reduces waste.  If serving mayonnaise in squeeze bottles, plan on 1 tablespoon (.5 ounce) per person.
  • Tomatoes – Serve a plate(s) of tomato slices on the side
  • Onions – Serve a plate(s) of very thin onion slices on the side.  By far, the easiest way to slice the onions is using a mandolin on the 1/8th inch setting.  This is the quickest method and will insure the onions are not sliced too thick.  It will also get you the highest yield of onion slices per onion if you’re watching costs.

 

Hoagie Sandwiches

  • Wal-Mart will provide very good made-to-order Hoagie Sandwiches.  They will also individual wrap these if you ask.
  • If you make your own, here’s how:

 

Hoagie to serve 4 – 6

  • 12-inch Italian-style hoagie roll, slice and then layer in the following:
  • Deli-sliced ham – 4 ounces
  • Deli-sliced capicola – 4 ounces
  • Deli-sliced provolone cheese – 4 ounces
  • Deli-sliced Genoa salami – 4 ounces
  • Shredded Iceberg lettuce – 2 cups
  • Thinly sliced tomato – 2
  • Thinly sliced white onion – 1
  • Italian dressing drizzled over the ingredients
  • Hot peppers, optional
  1. Slice the rolls horizontally, making sure not to slice all the way through.
  2. Open up the rolls and layer on the meats, cheeses, tomatoes and onions.
  3. Drizzle with Italian dressing and top with shredded lettuce and peppers if desired.
  4. Slice roll into 4 to 6 slices.

 

Sandwich Assembly Game Plan

If you have the luxury of 10 – 20 feet of counter space, I’ve found the quickest way to assemble the sandwiches is as follows:

  • Have one or more people slice the tomatoes and onions and plate them.
  • Set out rows of 2 slices of bread, spreading the slices in one of the rows with 1 tablespoon of mayonnaise as they are setting them out (this will be be bottom of the sandwich) and leaving all of the slices in the other row plain (these will be the top of the sandwich).  This is most easily done using a mayonnaise spreader or off-set spatula.
  • A second person (or team) should follow behind the first team putting the meat on each sandwich.
  • Another person (or team) should follow behind the ‘meat team’ putting the cheese on each sandwich.
  • If you’re serving immediately, a final person (or team) should follow behind the ‘cheese’ team adding the lettuce and other condiments, then putting the top slice of bread on the sandwich.
  • If you’re bagging them, a final team should follow behind the ‘lettuce’ team bagging the sandwiches.
  • Your teams can consist of 1 or more people, depending on number of workers available and sandwiches required.
  • Once the first batch has been completed, repeat until all sandwiches are assembled.

Notes

The sandwiches can be assembled, WITHOUT MUSTARD, MAYONNAISE, TOMATOES OR CONDIMENTS the afternoon prior, although the morning-of the event is far preferable.   DO NOT PRE-ASSEMBLE THE SANDWICHES WITH ANYTHING OTHER THAN THE MEATS AND CHEESES IN ADVANCE.  If you’re preparing these in advance, get single serving packets of mustard and mayonnaise and serve the tomatoes, lettuce and other condiment items on separate platters.

Bagged, prepared sandwiches must be refrigerated or in a cooler.  They should be stored on multiple racks to prevent the sandwiches from flattening.

You may want to offer a second choice for the vegetarian or non-meat eater.  This could be as simple as a buffet area set up with one or more loaves of bread, some lettuce, tomatoes, onions, cheese, sprouts with mustard and mayo.  It’s been my experience about 2 – 3% of my guests (including teen events) would prefer a vegetarian meal.

Leftovers cannot be frozen.

Ingredients
  • 6 (1 foot) loaves Italian bread
  • 4 pounds (thin slice cold cuts) turkey, salami, pastrami, bologna, etc.
  • 2 pounds cheese, sliced assorted varieties
  • 1 head iceberg lettuce shredded
  • 1 quart mayonnaise
  • 3 onions - very thinly sliced
  • 6 large tomatoes - thinly sliced
  • 1 quart kosher dill pickles - thinly sliced
  • salt and pepper
Optional
  • 1 jar mustard
  • 1 jar mayonnaise
Instructions
  1. Slice loaves in half with a serrated knife. 

  2. Spread one half of bread with mayonnaise and the other half with mustard. Then layer on the meats and cheeses. 

  3. If not serving immediately, lay the sliced onions, tomatoes, lettuce, pickles and other condiments on a separate plate to prevent sandwich from getting soggy.   

  4. Cut each of the 1 foot loaves into 5 sandwiches

Designing the Perfect Living Room

Living Room Design

NOTE: This is the fourth of a series of posts on designing and building a dream home.  We just happen to be doing it in paradise.   If you’re interested in home design, or just enjoy amazing home design pictures, follow us room by room in the Ahonui section of Aloha Dreams as we design and build our home.  The posts can be accessed in chronological order at the bottom of the page.

Design Principles

Although I’d agree the kitchen is the heart of the home, we still need at least one, if not several, comfy spots where we can relax and hang out with friends or even a good book for company.  Residents of Hawaii are fortunate in that there are often many places, including a shady lanai, which are perfect for this.  But regardless of this wealth of options, Hawaiian homes always have a living room.  The design principles of this room are no different than those of living rooms anywhere.  They may be executed differently, but in essence they are the same.  Let’s consider each design principle in detail, starting with function.

Function

Possibly you’ve heard the old saying “Form follows function.”   This is the first, and most important, principle in designing any room and too often it’s forgotten.  So let’s think about the function of our living room, or in other words, how we’re going to use it.   Are we going to be entertaining guests in it at some point?  How about wanting a cozy place to snuggle up with a great book?  Will there be a fireplace that we’ll want to sit in front of or gather round?  How about a TV?  Will we be watching TV in this room, or will we have a separate media room?  Will we need more than one TV viewing spot?  These are all important considerations for our living room.

The function of a room is supported by the furniture arrangement.  Too often contractors (and even architects) simply carve out a space and designate it as the “Living Room”.   And all too often the space allocated to these “Living Rooms” is entirely devoid of consideration of the furniture necessary to support the function.   Let’s think about one of the most basic functions of any living room – entertaining company.  We often have company over, and when we do, we need a place that is reliably clutter free to sit and talk with them.  While this will probably be out on the lanai at Hale Ahonui, there will be times when we’ll prefer to be indoors.  For those times we want a furniture arrangement in the living room which lends itself to conversation.

Next time you’re in someone’s home, look at their living room furniture arrangement and consider whether it lends itself to conversation.   If the furniture is in an L shape or, worse, a straight line, it probably doesn’t, especially if there are more than 2 people.   And this limitation on furniture arrangement is generally caused by the builder, or architect, not allocating sufficient space for the function of the room.

To allocate the correct amount of space for our Hale Ahonui living room, I’ve drawn it out on graph paper and then, in SketchUp.  I started with the furniture. I knew we wanted a conversation pit (sounds like something from the 60’s, doesn’t it?) to accommodate at least 6 people.  I also knew we wanted it in a semi-circle to facilitate easy conversation.  But we have an additional consideration.  We also want to accommodate TV watching.  We will have a media room/library in Hale Ahonui, but it will be a more private space.  We need a second location that multiple people can sit and watch television, so on one side of the ‘conversation circle’ (I like that term much better) we’ll incorporate a media wall.   Perhaps something like this?

So to support these functions, how about this for the living room furniture arrangement with the TV console running along the empty right side similar to the picture above?

And speaking of function, when you design a room, it’s also important that you measure and mark the location for each electrical outlet and switch.  You’ll want the outlets located where you plan to put the electronics and the switches located at each entrance to the space.  You’ll also want to determine the location of each heating and AC vent to ensure that it doesn’t detract from picture placement.   Next, measure the furniture you plan to use and place it in your floor plan. Generally, we’ll want the main furniture pieces directed toward the focal point, and we’ll want to keep the major traffic patterns open.   We also want the 2 main couches at least 5 – 6 feet apart and preferably about 10 feet.  In American culture this provides a comfortable conversation distance.

Here’s an interesting experiment.  Next time you’re in a pool where some people are sitting on steps around the edge talking with other people who are floating free in the pool, note the distance the floaters (who can place themselves wherever they wish) end up from the stationary people.  You’ll find it’s often about 11 feet.

Another consideration is tables placed so that each guest has a place to park their frothy Hawaiian drink.

Establishing a Focal Point

When you’re designing a room, it’s also important to visually establish a focal point.  Often that can be a dramatic fire place, or an attractive work of art.  Designing a home in Hawaii requires an entirely different mind-set.  When you design a home on the mainland, you think about the living room, the dining room and the bedroom.  And those things are all indoors, right?   Well not so much in Hawaii.  Given the year-round beautiful weather, very often those rooms – and especially the living room – have a sliding window wall which opens up the room to the outside.  Like this.

Isn’t that gorgeous?   This sliding window wall is made up of large retractable glass door panels which retract into the wall to allow the home to open up to the beautiful setting beyond.   You’ll notice the ‘blank’ wall space to either side of the opening.  That’s to allow the panels a place to stack inside the wall.  I love the golden glow this room has. Don’t you think we want to incorporate that into Hale Ahonui?  Me too!

One of the hallmarks of a successfully designed room is a focal point.  That’s the feature you want to highlight and draw the occupant’s eyes towards.  When you have a window wall the opening definitely becomes the focal point of the room, especially if you have a view beyond it like this.

You’ll notice there’s minimal art in this room.  That’s because the view, or focal point, becomes the art work.

Creating a Cozy Scale and Space

Ever see a living room that just invites you to sit?  I’m talking about a space that whispers, “come in, kick off your shoes, and curl up here with a good book and something wonderful to drink.”  This is another important design principle.  Here’s an example of that kind of space.  Doesn’t this whole area just invite you to sit down and snuggle up?  Everything looks soft and inviting.   Without being too casual, the furniture looks like something you could get comfortable on, tuck your legs up under you and burrow back into the overstuffed pillows.

Like we discussed, you’ll notice it’s arranged for conversation.   I think this is one of the most inviting living rooms I’ve seen.  I think we need it!

Here’s another space that begs for a small group of 5 or 6 friends to sit awhile and chat (it’s called talk story in Hawaii.)   Can’t you just imagine you and your friends relaxing here.

WOW Factor

The last design principle we’re going to take into consideration for our Hale Ahonui Living room is incorporation of a WOW factor.  If you’ve been following my AlohaDreams recipes and my Hale Ahonui design series by now you probably know I’m a firm believer that if it’s worth doing, it’s worth doing over the top.  Why not?  Folks get a kick out of being made to feel special.  So whether it’s the guests at our table, or the guests in our home – let’s WOW ’em if at all possible.

With that in mind, I think we need a WOW factor for each room in Hale Ahonui.  Wouldn’t you agree?  So for our living room WOW factor, I can think of nothing better than a window wall view of the beautiful infinity pool melting seamlessly into the royal blue ocean beyond.   We can even flank that infinity edge with a couple of fire pots!   (I just love, love, love fire pots!!  More on those to come.)

A little about me

Aloha and welcome to my kitchen!   I’m so happy you’re here.   Grab a seat at the island and let me tell you a little about myself.

 

I love to cook

I’m Betsy and I love to cook.   I enjoy researching recipes and finding the best options available and then making them even better.  I’m often involved in cooking for large groups, anywhere from a cozy graduation open house for 30-40 to a 230-attendee Youth Conference.  You’ll find my recipes are thoroughly tested and easy to follow, but most of all just plain fabulous!   I’m inspired by the season and by recipes from my mom’s recipe box.

This Strawberry Pie is an example of one of the many things I like to cook.  It’s is as easy as it is gorgeous.  And it tastes every bit as delicious as it looks.

I own several small businesses

In addition to sending you fabulous recipes several times each week, I’m also a small business owner.  In fact, I’m co-owner of several small businesses.  My first business partner was my mom, Betty.    What an amazing woman (and cook!)  I could not have asked for a better mom, or business mentor, and there’s not a day goes by that I don’t miss her.  Mom always said when you own a business you need to know how to do everything yourself.  You shouldn’t ask someone to do something you don’t know how to do.  My businesses are very high-tech and I’m not an overly high-tech kinda gal.  But your mother generally knows what she’s talking about, so I learned all the skills necessary and created every bit of this blog from the ground up.  Mom, this one’s for you!

 

I love to dance

I live in Missouri with my husband, Jeff.  He was a medalist on the International Dance Team in college.  The first time I danced with him he said, “It’s my job to make you look great on the dance floor!”  (How can you not love a guy like that??)  When I found out he carried a pocket knife and could tie 10 different knots, it sealed the deal.  (I love a competent man!)

At the moment we are sans-pets.  In no particular order I also like: designing (anything), cooking (everything), tiki torches and fire pots, kind people, the smell of libraries and the smell of lumber yards (it’s the smell of promise and potential), ornamental grasses, skiing, learning, skeet shooting, entertaining, scuba diving, paddle boarding, the Flint Hills, really intense thunderstorms, the Flint Hills in the midst of a really intense thunderstorm and Labrador Retrievers.  (Gotta do something about that san-pets thing).

I love to cook for large groups of folks I love

I started this blog because over the years I’ve accumulated a lot of terrific recipes and methods for cooking for a large group.   The first time I was asked to cook for 300 teens at a Church youth dance, I knew nothing about it, but I said a prayer and then I said ‘Yes!’   I’ve been saying ‘Yes!’ ever since.  (Now you know my sanity is also in question.)   My goal is when you find yourself in that situation you can lean on my hard-won knowledge and confidently say ‘Yes!’ too.

My large group recipes are all field-tested multiple times at multiple quantities.   Most are teen-tested and ALL are enthusiastically approved!

For the last 10 years we’ve been part of a small group of 6 friends who host a dinner every 2-4 weeks.  These can be as simple (and delicious) as pizza and as elaborate as a 7-course New Year’s Feast.  We’ve had great opportunities to find and fine-tune hundreds and hundreds of fabulous recipes!  I’ll be sharing these with you. The best roast chicken I ever had (a true test of a cook’s ability) was at one of these dinners as was one of the Best Grilled Cheese Sandwiches!

My recipes are classic and approachable, inspired by my favorite seasonal flavors and recipes passed down from my mom.  My goal is to provide you recipes you can use first time without fear and receive RAVE responses!   And, more importantly, I want you to experience the same joy I do when I’m cooking.

You might be wondering why this blog is called Aloha Dreams.   Well, it’s because of another thing I really love: the Big Island of Hawaii.   The first time I saw the Kohala Coast on the Big Island, I fell in love. It reminded me instantly of the Flint Hills – but with much better weather.  And best of all it comes with an ocean!

So instead of coming home from our first trip to the Big Island with a souvenir shell, we threw sanity to the wind and came home with a 3 acre lot.   Here it is.
